To make this eggless fruit cake, you can use any of your favorite dried fruits likes raisins, dried dates, figs, apricots, berries and glace cherries. You can also skip glace cherries if you want to avoid artificial colors. I have mentioned in the notes below. You must soak the dried fruits in something wether it is liquor or fruit juice.

Instructions to make Eggless Dry fruit Cake:
  1. In a large bowl add together Maida, cream and Condensed milk and normal milk mix with sugar. Mix all ingredients one by one.
  2. Now baking soda, baking powder, vanilla extract and Lemon Juice and stir well make a smooth batter.Now add all the chopped nuts and dry fruits mix well.
  3. Preheat the oven at 350 F for 5-6 minutes.Take a baking pan and grease with Butter. Pour the mix and back for 40 minutes as a same temperature.
  4. After 40 minutes colour will come Brown means cake is prepared. Transfer the cake to a cool rack after 20-25 minutes serve with coffee.

I have mentioned in the notes below. You must soak the dried fruits in something wether it is liquor or fruit juice. If added without soaking in the cake then those dried fruit will soak up all the moisture from the cake. Eggless fruit and nut cake is a tasty and healthy cake.
