  5. Cook uncovered over medium to slightly above medium heat until veggies have reduced in size and are staring to brown. Cooking uncovered will take a little longer but you will not have to drain your skillet of liquids near the end of cooking like you would have to do with a covered skillet.

Fry them until they become light brownish. Add sliced onions and fry them until they are translucent. To make the vegetable fajita filling: Heat the oil in a large skillet or frying pan over medium-high heat. When hot, add in the peppers, onions, chili powder, cumin, salt, and smoked paprika. Add the canola oil to a cast iron skillet on high heat.
