  7. Make ready 1/2 cup Dashi Stock *OR 1/2 cup Water & 1/4 teaspoon Dashi Powder
  8. Get 1-2 teaspoons Sake (Rice Wine)
  9. Prepare 1/4 teaspoon Salt
  10. Take 1 teaspoon Soy Sauce *alter the amount to suit your taste
  11. Take 1 teaspoon Mirin
  12. Prepare 1/2 teaspoon Grated Ginger
  13. Prepare 100 g Shiitake, Shimeji & Enoki *OR add as much as you like
  14. Get 1 teaspoon Potato Starch *mixed with 2 teaspoons Water
