The ingredients needed to make Brad's duck gumbo:
  1. Prepare 1 boneless skinless breasts from 6 ducks
  2. Make ready 1/2 cup butter
  3. Take 1/2 cup flour
  4. Make ready 1 small onion chopped
  5. Get 2 cup water
  6. Prepare 3/4 cup good port wine
  7. Get 28 oz can stewed tomatoes
  8. Make ready 14 oz can tomato sauce
  9. Make ready 14 oz can sliced okra
  10. Prepare 1 tbsp smoked paprika
  11. Get 1 tbsp + cajun seasoning
  12. Make ready 1 tsp salt
  13. Make ready 1/2 tbsp Italian seasoning
  14. Get 1 tsp crushed red pepper
  15. Make ready 4 bay leaf
  16. Make ready 4 clove garlic, minced
  17. Get 2 tbsp balsamic vinegar
  18. Prepare 1 keilbasa loop sausage, sliced 1/2" thick
  19. Make ready 1 small can of diced green chiles
  20. Get 1 tbsp franks red hot
  21. Make ready 1 tbsp gumbo file
  22. Make ready 1/4 cup flat leaf parsley
  23. Make ready 1 cooked rice

I used wild wood ducks when I made this gumbo originally and due to their small size I ended up using three. Either way, duck makes a really good gumbo. Add the tomatoes, garlic, onion, celery, bell pepper, bay leaves, and gumbo base mix. Cook on High until the mixture boils.

Instructions to make Brad's duck gumbo:
  1. melt butter in a lg heavy dutch oven. add onions and saute until just tender.
  2. meanwhile place cleaned duck breasts on a broiler pan. season with cajun spice and broil for 7 - 10 minutes depending on how thick they are. broil to rare and set aside
  3. add flour to onions and make a roux. this will be thick almost doughy. fry until flour starts getting tan in color the mix should smell nutty
  4. slowly add water and port wine in small amounts. stir constantly. if liquid is added too fast, flour will almost turn into dumplings.
  5. add tomatoes and tomato sauce, vinegar, garlic and all seasonings except gumbo file.
  6. let simmer for 10-15 minutes
  7. slice duck into thin slices
  8. add sausage, duck, hot sauce, gumbo file and green chiles. simmer 5 more minutes
  9. serve over hot cooked rice. garnish with parsley. i like mine spicy so i add extra.hot sauce

Add the tomatoes, garlic, onion, celery, bell pepper, bay leaves, and gumbo base mix. Cook on High until the mixture boils. Reduce heat, and stir in the duck meat, okra, shrimp, and sausage. Toss duck with flour/seasoning until well coated. For his take on Cajun gumbo, chef Justin Devillier of La Petite Grocery in New Orleans uses rendered duck fat in the roux instead of butter and quartered ducks in lieu of the classic chicken.
