Put beetroot and cumin in the small bowl of a food processor, season and blend until smooth. Our Beetroot and Mint Hummus is such a tasty and quick dip to make - just throw everything into a blender/food processor/bowl and attack it with a stick blender! Inspired by Mr Marks & Spencer. When the beetroot has cooled, add all the ingredients, except the mint, to a food processor and blend until smooth.

The ingredients needed to make Beetroot mint & Cumin soup:
  1. Prepare 3 Raw Beetroots peeled and cut up
  2. Make ready 1 red onion diced
  3. Take 1 tsp brown sugar
  4. Make ready 1 + 1/2 pint stock veg or chicken(2 chicken stock cubes or veg)
  5. Prepare 3 Garlic Cloves crushed
  6. Prepare 1 tbls fresh mint
  7. Get 1 tsp Cumin
  8. Prepare 1 small potato peeled and cut up
  9. Make ready Some toasted seeds
  10. Make ready 1 tbls fresh corriander
  11. Prepare Salt n pepper

Stir in mint just before serving. Put beetroot and cumin in the small bowl of a food processor, season and blend until smooth. Tip into a bowl, add the mint and lemon juice, then gently stir through crème fraîche to get a rippled effect. Beetroot juice contains plenty of healthful vitamins, minerals, and antioxidants.

Instructions to make Beetroot mint & Cumin soup:
  1. Add the Beets, red diced onion and sugar spread over in a small oven dish. Cook in the oven until the beets are soft.
  2. Add a little oil to a pan and add the garlic as soon as you smell it its ready dont burn. Next add the cumin and the stock add the veg cubes to the 1 +1/2 pint of water.
  3. Add this stock and potato to the garlic and the beetroot mix thats roasted. Simmer for about half an hour.
  4. Then add it all to a blender and blend it will be thick so add more boiled water to get the thickness you like. Add to a serving bowl add the toasted seeds and fresh corriander also fresh mint. I dropped in a 1/4 tsp double cream to finish. and Enjoy.

Tip into a bowl, add the mint and lemon juice, then gently stir through crème fraîche to get a rippled effect. Beetroot juice contains plenty of healthful vitamins, minerals, and antioxidants. Drinking beetroot juice could provide several health benefits, such as lowering blood pressure and reducing inflammation. This casual summer salad is delicious served with Mediterranean Beetroot & Mint Greek-style Yoghurt Dip.
